Our baby wants to eat dinner at 5 pm and definitely no later than 5:30 pm. With baby led weaning, you’re supposed to feed the baby/kid the same food as you instead of a separate meal. Which means, I need to start dinner before 5 pm and I work, so that’s hard. Thankfully, my in-laws take care of his dinner most days (have I mentioned how amazing they are?) so we’re off the hook until the weekends.
These recipes help simplify dinner by either allowing me to dump it in the crockpot and forget it or make a big batch and have leftovers for at least one lunch and maybe another dinner.
First up: baked Ziti. I’ve been making this on repeat for weeks now. It’s seriously so, so easy. And so, so good. I actually made a big batch on Sunday and shared it with my in-laws last night. All I had to do was grab some bread from a local Italian place and we were set (my MIL put together a quick salad).
Next: Chicken Fajitas. This might be the easiest recipe ever. It makes plenty of leftovers. We usually serve with rice or a side of beans. You can also just put the chicken and veggies on a salad. We haven’t done this one much lately because we’ve been pescatarian but it is one of my favorite easy meals for sure.
Lastly, crockpot chili. Who doesn’t love chili in the fall/winter? You could easily add meat to this – I’d brown it a little first and then add it to the bottom of the crockpot before adding anything else. We stick with vegetarian chili and serve with yummy cornbread. I do recommend using low sodium canned goods in this recipe.

I’d rather spend my time playing with my son and enjoying our family time than prepping and cooking meals. These meals allow me to do that and most are also pretty healthy!
