With the weather warming up, we’ve found a few new dishes to add in our regular rotation. My FAVORITE is this Shrimp Burrito Bowl which I now crave 24/7.
Since I’ve shared about my obsessive eating habits before, I’ll tell you that I eat the same thing for breakfast and lunch everyday. I might switch it up a little like add some fruit or 1/4 avocado or maybe switch out a side for lunch but the mains stay the same. What can I say? I’m a creature of habit.
We’ve definitely noticed our grocery bill going up with trying to eat at home more. Somehow each of our lunch/dinners out end up being $40-50, even at casual spots so it makes way more sense to build that into our weekly groceries and not only save money, but eat healthier.
So, on this week’s menu we have:
- Grill out: burgers, Brussels sprouts
- Shrimp fried “rice”: I added more peas, carrots, green onions and shrimp (will also make it with tofu). It has a recipe on the back to make it “fried rice.” Here’s a recipe if you don’t buy packaged cauliflower “rice”
- Salmon and asparagus
- Skinny Taste Mediterranean Quinoa Salad (use as a lunch side all week)
- Burrito Bowls with cilantro lime rice (add shrimp!)
I will probably eat out once this week but haven’t decided where. Bartaco has been my go-to spot as of late but it’s not nearly as convenient as the restaurants at the end of the neighborhood.
My work sent a huge fruit basket (also had cheese, smoked salmon, sausage, nuts, chocolate and more!) this past week, so we’re munching on all of that this week.
Also, if you’re curious about my breakfast items, I make 2 over-easy eggs and slather them in Texas Pete and 1/2 of a Dave’s Killer Bread Cinnamon Remix Bagel with cream cheese. 💁🏼♀️
