It’s been a (long) while since I blogged but I have a good reason: we had another baby! She’s almost 3 months old now and just the best addition to our family. But as you can imagine, it threw things off like reading six books a month or traveling on grand adventures. So here we are… and my first post back is pretty basic.

5 recipes I made to make life easier this week:

Our wonderful friends (and even some folks we don’t know in the neighborhood) kept us fed for the first few months which was pretty incredible. Such a relief not to have to think about dinner or even really clean up from it!

Harvest grain salad

And I’ve had the worst sweet tooth since leaving the hospital. And frankly, we’ve gravitated towards the easiest thing to have for food vs the healthiest options.

But this week, we are prepped with lots of good, easy AND healthy options. I also avoided buying any additional sweets so maybe that’ll help curb my cravings this week.

We also have to pack lunch (nut-free!) for our big boy now so I mixed up a Halloween Chex mix as a snack and a treat for his lunch. It was just 5 things: pretzels, vanilla yogurt covered raisins, m&ms, candy corn and cinnamon Chex mix. He thought it was the best treat ever.

While I was preparing other meals, I chopped some veggies for easy snacks and salad toppings too. And one of my fave tips I got from my friend Virginia is that the store will shred your rotisserie chicken for you which is a game changer when it comes to quick meal prep.

Baked oatmeal

I didn’t make this baked oatmeal recipe this week but I’ve made it half a dozen times since having our girl. I use peaches and blueberries and it’s FANTASTIC. Maybe next week…

The kitchen was a bit of a mess at the end of the day but I know my mid-week self will thank my self who used-all-the-bowls today when I’m tired and hangry later this week.
