What we’re eating now: One Pan Taco Bake

I’m realizing as I start typing that I probably should have taken better pictures of the finished product but oh well. It wasn’t the prettiest anyway but it did taste delicious!

I bought ground beef to make hamburgers but we had hamburgers over the weekend so I decided to mix it up. I pulled a bunch of random stuff out of the fridge and pantry and crossed my fingers.


  • 1 lb ground beef (or turkey)
  • Taco seasoning
  • Cilantro (I used dried)
  • Onion powder
  • Cumin (I added extra but there’s plenty in the taco seasoning so you can skip)
  • Red onion
  • Red pepper
  • Green pepper
  • Corn (I used frozen, canned would work too — just drain first)
  • Black beans (I didn’t have any but I’d add them next time)
  • Diced tomatoes (drained)
  • Enchilada sauce (I used 1/2 can)
  • Mexican cheese


  • Brown the meat over medium high
  • Add tomatoes, corn, onions and peppers
  • When vegetable soften, add spices
  • Pour in 1/2 can of enchilada sauce
  • In last 2 mins, lower heat and add cheese (I did 1/2 bag)
  • Serve on tortillas or as a dip with chips
  • Serve guacamole, sour cream and salsa on the side
  • We had Spanish rice on the side
