I’m realizing as I start typing that I probably should have taken better pictures of the finished product but oh well. It wasn’t the prettiest anyway but it did taste delicious!

I bought ground beef to make hamburgers but we had hamburgers over the weekend so I decided to mix it up. I pulled a bunch of random stuff out of the fridge and pantry and crossed my fingers.
Recipe
- 1 lb ground beef (or turkey)
- Taco seasoning
- Cilantro (I used dried)
- Onion powder
- Cumin (I added extra but there’s plenty in the taco seasoning so you can skip)
- Red onion
- Red pepper
- Green pepper
- Corn (I used frozen, canned would work too — just drain first)
- Black beans (I didn’t have any but I’d add them next time)
- Diced tomatoes (drained)
- Enchilada sauce (I used 1/2 can)
- Mexican cheese
Cooking:
- Brown the meat over medium high
- Add tomatoes, corn, onions and peppers
- When vegetable soften, add spices
- Pour in 1/2 can of enchilada sauce
- In last 2 mins, lower heat and add cheese (I did 1/2 bag)
- Serve on tortillas or as a dip with chips
- Serve guacamole, sour cream and salsa on the side
- We had Spanish rice on the side
