We have quite a few meals that we eat on a regular rotation, and most of the time we do a great job eating at home but in our busy season (fall filled up before it even started!) we find ourselves eating out more often. The easier the meal, the less likely I am to be able to throw it together after work and before bedtime routine starts at 6:30 pm 😬

Buffalo wings are my love language. So when we did Whole30 back in 2015, I fell hard and fast for the wing sauce recipe. I loved that it wasn’t sugary like ones you get at restaurants. It’s such a simple sauce to make and then you just put the wings in the oven for 35 minutes. Even though we aren’t doing Whole30 anymore, we have these at least once every couple weeks. I usually serve with a salad and Mac & cheese. Here is the recipe (I usually use coconut oil in place of the ghee / coconut amino portion of the recipe).

Landon hates burrito bowls apparently but I still make them on the reg. My in-laws love them. They taste clean and fresh and so summery! They are easy though have a lot of components. We like to add fresh tomatoes and jalapeños from our garden. Also, add sour cream and (spicy) wholly guacamole on top for even more deliciousness! Here is the recipe.

Honey sriracha chicken might be my favorite discovery of the summer. I was worried it would be too spicy the first time I made it but it was perfect. We’ve grilled the thighs and baked them, both ways were great. We’ve served it with grilled corn on the cob and grilled asparagus or sautéed asparagus and Mac & cheese (we have a lot of Mac & cheese thanks to a certain toddler). Here is the recipe.

Now that we’re heading into fall, I’m looking forward to this crockpot quinoa Mexican bake again (I clearly love Mexican takes on food). It’s easy and so filling! Here is the recipe.

If all else fails, we’ll have salmon and veggies. I always put soy sauce and lime juice on the salmon and it’s sooo flavorful!

All of these make plenty of leftovers for lunch/dinner, which is even more helpful as a working parent.

Good thing we don’t let this guy make the menu or the food. We’d all be eating mac & cheese, apple sauce and goldfish!
